It all began with a few meters of fishing line on the banks of the Neckar river in his younger years. “When you live right by the water, you can't help but be fascinated by it,” recalls founder Benedikt Röser. His passion for fishing and catching fish has been with him since childhood. But it was his enthusiasm for fly fishing, which he discovered during several visits to Norway, that finally led him to salmon. And thus to the fish with which he is now realizing his lifelong dream. Together with his family, in the heart of the Dolomites.
This lifelong dream led to the creation of Europe's highest salmon smokehouse in 2020. In one of the most idyllic corners of South Tyrol and in a place that could hardly embody more authenticity: the Mittersteiner Hof is a mountain farm over three hundred years old, which the Röser family bought and renovated many years ago. For Benedikt, it is a second home and always the place where his connection to nature was palpable. He often accompanied his father, a trained nature and landscape guide who particularly appreciates the unspoiled nature of the Dolomites. He also learned a lot from his brother about organic farming and the importance of sustainability. So it was clear from an early age that salmon could only be refined using high-quality, natural ingredients.
The construction of the smokehouse on the farm was also characterized by a sustainable and holistic approach. Years earlier, Benedikt had already gained extensive experience in a wide variety of smokehouses. From long-established family businesses in Norway to premium smokehouses in Germany—he drew on all these impressions to create the perfect concept for himself. In addition to the highest quality and hygiene standards, the smokehouse produces CO2-neutral electricity thanks to its own photovoltaic system. The smokehouse is also distinguished by its own spring water and the finishing ingredients that are virtually on its doorstep. The salmon smokehouse has created a place where the passion for the homeland can be felt. A place where the depths of the sea meet the peaks of the Dolomites and come together in the form of an extraordinary product.
